A Tribute to Viv: Community and Kitchen Inspiration
If there is one woman in my life that I would have to choose that inspires me it would hands down be my sister in law Viv. She has such a big heart and she is so giving to the community and the youth in our area.
She is also fantastic in the kitchen and can decorate a room in no time. She makes every event special. She takes the time and care to not only make a room and the food presentation look beautiful she always leaves behind a little special touch of herself.
Viv came over this evening to borrow some rhubarb from my yard. I tend to want to keep it but rarely ever get around to harvesting it let alone making much out of it. But seeing what she whipped up in a matter of an hour is once again inspiring.
Quick Ideas: 3 Ways to Use Rhubarb Tonight
1. 5-Minute Microwave Rhubarb Compote
Description: Perfect for a busy weeknight. Serve over ice cream, yogurt, or use as a topping for pancakes. This is quick and delicious!

Ingredients: 2 cups diced rhubarb, 1/4 cup granulated sugar, 2 tablespoons orange juice or water, pinch of cinnamon.

Instructions: Combine all ingredients in a microwave-safe dish. Cover loosely and microwave on high for 3-5 minutes, stirring halfway, until the rhubarb is tender and softened. Serve warm or chilled over yogurt or ice cream.
2. Simple Rhubarb Crumble Bars
Description: A great weekend project for the Empty Nester. This uses oats, flour, and butter for the base and topping, with a sweet, tart rhubarb filling. It’s a classic that requires minimal fuss but yields a beautiful, comforting treat. You can easily cut them into squares for sharing or freezing.

Ingredients: 1 cup all-purpose flour, 1 cup rolled oats, 1/2 cup packed brown sugar, 1/2 cup softened unsalted butter, 1lb chopped rhubarb, 1/2 cup granulated sugar, 1 tablespoon cornstarch.

Instructions: Preheat oven to 375F (190C). Mix flour, oats, brown sugar, and butter until crumbly. Press half the mixture into an 8×8 inch pan. Mix rhubarb, granulated sugar, and cornstarch, then spread over the base. Top with remaining crumb mixture. Bake for 35-40 minutes until golden brown. Cool completely before cutting.
3. Rhubarb Mint Cooler (Infused Water/Juice Base)
Description: A simple, non-alcoholic way to enjoy the flavor. Use this concentrated juice as a base for sparkling water, lemonade, or a light summer cocktail.

Ingredients: 4 cups chopped rhubarb, 4 cups water, 1/2 cup sugar (adjust to taste), 1 small bunch of mint.

Instructions: Combine rhubarb, water, and sugar in a saucepan. Bring to a boil, then reduce heat and simmer for 15 minutes. Add mint in the last 5 minutes. Strain the mixture through a fine sieve (discard solids). Chill the liquid completely. Use as a concentrate mixed with sparkling water or lemonade.

I haven’t had a rhubarb.. anything since moving to the city. but, I remember how easy it is to grow. The unique flavor always brings me right back to those simple country days.
I’m not much of a gardener, see my rant about gardening…but when we bought our house there was already rhubarb there. I don’t think I’ve ever used it but she does and I’m thankful!

Not a fan of rhubarb, but it all looks so pretty! My mother n law is my own Viv. She makes her own cheese, yogurt, an wine. She is an amazing wood crafter, she is great at seeing and can upholster just about anything. She is great at drawing and painting. I don’t think there is anything that woman can’t do!
